Bobotie - South African casserole
Probably the oldest dish in South Africa. The recipe appeared in the year 1609 in a Dutch cookbook which originates from Indonesia.
Ingredients:
- 1kg mince (lamb, beef or pork)
- 1 large onion
- 30 ml butter or oil
- 1 thick slice of bread soaked in milk
- 250 ml milk
- 15 ml apricot jam or chutney
- 62 ml lemon juice
- 190 ml seeded raisins or sultanas
- 12,5 ml curry powder
- 5 ml turmeric
- 3 eggs
- 1 clove of garlic (crushed)
- 190 ml white wine
- Salt & pepper
Saute onion in butter or oil. Mix all ingredients except 2 eggs, milk and lemon leaves. Turn into greased oven dish and stick lemon leaves on top. Bake 160 C for about 45 minutes. Beat eggs with milk, add salt and pepper to taste, and pour over dish. Bake slowly at 150 C for a further 25 minutes, until set and golden brown. Serve with yellow rice, chutney and banana.
