Bobotie - South African casserole

Probably the oldest dish in South Africa. The recipe appeared in the year 1609 in a Dutch cookbook which originates from Indonesia.

Ingredients:

  • 1kg mince (lamb, beef or pork)
  • 1 large onion
  • 30 ml butter or oil
  • 1 thick slice of bread soaked in milk
  • 250 ml milk
  • 15 ml apricot jam or chutney
  • 62 ml lemon juice
  • 190 ml seeded raisins or sultanas
  • 12,5 ml curry powder
  • 5 ml turmeric
  • 3 eggs
  • 1 clove of garlic (crushed)
  • 190 ml white wine
  • Salt & pepper



Saute onion in butter or oil. Mix all ingredients except 2 eggs, milk and lemon leaves. Turn into greased oven dish and stick lemon leaves on top. Bake 160 C for about 45 minutes. Beat eggs with milk, add salt and pepper to taste, and pour over dish. Bake slowly at 150 C for a further 25 minutes, until set and golden brown. Serve with yellow rice, chutney and banana.
